Senior Pasta Chef - Wholesale Production

Fred brings more than 30 years of fresh pasta experience to Piccola. He spent three decades working in a pasta shop in Queens, where he learned traditional pasta-making techniques rooted in the Emilia-Romagna style.

Today, he leads much of Piccola's wholesale production, helping prepare large-volume orders and making sure they reach our restaurant and hospitality partners with the same care as everything made in the shop.
